Lemon Cheesecake

  • 3 eggs
  • 3 cups nonfat plain greek yogurt or nonfat plain yogurt
  • 1 small box instant sugar free/fat free cheesecake or vanilla pudding.
  • 1/2 Tbsp. lemon extract.
  • 3 Tbps. sugar substitute ( I used stevia)
  • 1 Tbsp. fresh lemon juice.

In mixing bowl add eggs, lemon extract, lemon juice, sugar substitute and beat well. Add yogurt and dry pudding, mix well. Pour into a lightly greased with non stick cooking spray pie dish or springform pan. I used a 9 inch springform pan.

Bake 350 for 30 min. It may look jiggly but once it’s chilled, it will set. Let it cool for about 15-20 min before covering it with plastic wrap and let it chill overnight in the refrigerator.

💥it’s recommended to chill overnight before eating. It can take up to 12 hours for the texture and flavor to completely set in. The longer it chills the better it tastes.
Servings: Makes 8 Slices / 1 Freestyle SmartPoints® per slice

You can substitute regular instant pudding mix for the sugar free pudding mix. The servings for that is: 10 servings /  2 points per serving.

    1. You can definitely download my ebook on your Apple tablet. In order to do it, you’ll need to access Amazon through your safari browser not the amazon app to download. Then download the free kindle app from your device to access it. Thanks so much!

    1. Yes. You can add 3tbsp of regular sugar as a substitute. It will change the points per serving be sure to check the ww app for point value if you follow he ww Freestyle program! Thanks so much

  2. Woudn’t adding low/fat free ricotta cheese to this recipe increase the authenticity of cheesecake without adding significant points? Just has to be blended very well…Thoughts anyone?

    1. The recipe itself equals out to 4 points for the entire cake. You can divide by 4 servings for 1sp or I like to portion it out to 8 servings and the ww app rounds it upto 1sp per slice

  3. I will definitely try this recipe, sounds yummy. Do you think it would be ok to substitute fresh lemon juice for the lemon extract?
