One Smart Point Coconut Protein Pancakes



  • 1 tsp baking powder
  • 1 egg
  • 1 scoop @questnutrition quest salted caramel protein powder ( 1 packet equals one scoop) or you can use any flavor of quest protein powder (the link for the Quest Protein is on the product page of the blog, if you would like to purchase it)
  • 2-4 Tbsp water
  • 1/2 tsp coconut extract
  • 1 Tbsp Swerve/Stevia/Splenda or sugar substitute (optional)


Mix all ingredients together and whip with a fork to get the batter nice and fluffy.
Spray a skillet with non stick cooking spray and pour batter onto skillet making 3 pancakes. I use Trader Joe’s canola nonstick cooking spray.

Note: the batter should be on the thicker side. It cooks better this way. It will expand once it starts cooking.

Servings: Make 3 pancakes/ 1 point for 3 pancakes

You can add Fat Free Reddi Whip, 1/4 cup sugar free Mrs Butterworths syrup for 1 smart point and I like to top mine with one Alyssa’s cookies that I purchase on Amazon for an additional point.
