Peanut Butter Protein Pancakes

  • 1 scoop Quest Peanut Butter protein powder or you can use any flavor of Quest protein powder or one sample packet is equivalent to one scoop. ( You can purchase the Quest protein powder on my products page on the blog)
  • 1 egg
  • 1 Tbsp non fat plain greek yogurt
  • 1/2 tsp baking powder
  • 1/3 cup water
  • 1 Tsp almond extract or vanilla extract
  • 4 Tbsp Fat Free Reddi whip
  • 1 Tbsp Jif Whips Peanut Butter melted
  • 1/4 cup Mrs. Butterworth’s Sugar Free Syrup
In a mixing bowl combine Quest powder, egg , water, and extract and mix well. The batter should be on the thicker side. Heat skillet and spray with non stick cooking spray. Pour batter onto skillet. Making 4 small pancakes.
Melt 1 Tbsp Jif Whips Peanut Butter with 1tsp of water in a microwaveable bowl for 60 seconds until peanut butter in thinned out. Pour peanut butter on top of pancakes. Then add sugar free syrup and fat free redid whip.
Serving: 4 pancakes for 1 Freestyle Smart Point.
