What ingredients do I need to make these Pizza Calzones?

Self Rising Flour

Two Ingredient dough is a combination of self-rising flour and non fat plain Greek yogurt. The point value can vary depending on what brand of self rising you use. I like to use Gold Medal which is only 5 points for 1/2 cup compared to 6 points for most other brands.

Plain Non Fat Greek Yogurt

As far as the Greek yogurt, I recommend using a super thick Greek yogurt, the thicker the yogurt the less stick the dough will be to work with. The brands I like to use is either Fage or Chobani. 

Mozzarella Cheese:

I’m mourning over the loss of Trader Joe’s lite mozzarella cheese. I use to use that for these pizza calzones but recently I was informed by Trader Joe’s that their lite mozzarella is out of production and won’t be back until 2020.  So….with that said…I’ve been on a hunt for a low point replacement. The one I found is from Target. It’s called Market Pantry reduced fat mozzarella-it’s 2 points for 1/4 cup. It melts great and tastes just like regular mozzarella. Keep in mind with this change, it increased the point value by 1 point per calzone. 

Turkey Pepperoni: 

Turkey Pepperoni has 70 percent less fat than regular pepperoni.  You can have up to 15 slices for 1 point. 

Pizza Sauce:

You can use jarred pizza sauce or my Zero Point Marinara sauce.  Ragu pizza sauce is only 1 point for 1/4 cup and has great flavor. You can also use use my Zero Point Marinara sauce. However, since this marinara sauce is thinner- you will want to omit the water to make a thicker sauce. You can also thicken the marinara sauce by adding 1/2 tsp cornstarch with 1 tbsp water and adding that while the sauce is simmering. 

Fresh Vegetables:

You can be as creative as you like and add any toppings you desire from: jalapeños, olives, basil, onions, bell peppers, mushrooms, pineapple, chicken, ect.

If you’re including additional veggies like bell peppers, onions, or mushrooms it’s a good idea to cook them before adding it in the calzone. These vegetables contain a lot of water and it’s best to cook the water out before placing them on the pizza to avoid sogginess.

 

Ingredients:

  • 1/2 cup Gold Medal self-rising flour
  • 1/2 cup plain nonfat Greek yogurt ( Fage or Chobani) 
  • 12 turkey pepperoni ( I use Great Value from Walmart)
  • 1/4 cup pizza sauce ( I use Great Value)
  • 1/4 cup light mozzarella ( I use Market Pantry from Target ) 
  • 1 egg  (beaten with 1 tsp water)
  • Any additional toppings such as: onions, green peppers, mushrooms, ham, sausage crumbles, or even pineapple!

 

Directions:

  1.  Preheat oven to 425.
  2. In a large mixing bowl combine, flour and Greek yogurt.
  3. Sprinkle a little extra flour on the tabletop or whatever surface you plan on using to knead the dough. Place the dough ball on top, kneading it with your hands. If it sticks to your hands, sprinkle a little extra flour on it. Knead 8-10 times, until it’s a pliable dough.The less you knead it the less sticky it is to work with.
  4. Spread the 1/2 dough out on a parchment-lined baking sheet, until it’s about 1/4″ thick, then cover with 2 Tbsp pizza sauce, 2 Tbsp cheese, 6 turkey pepperoni and any other toppings you like.
  5. Fold dough in half and pinch sides to close up the holes. Repeat steps for the other 1/2 of the dough.
  6. In a small bowl whisk together egg and 1 tsp water. Using a basting brush, brush the tops of the calzones with egg wash. ( you won’t use all of the egg wash) 
  7. Cook for 10 to 12 minutes, or until the crust has puffed up and is lightly golden.
