Jalapeño Popper Chicken


Ingredients:

  • 4 ( 4 oz.)boneless skinless chicken breasts.
  • 4 slices hormel black label bacon
  • 3 oz lite cream cheese.
  • 1 tsp garlic powder.
  • 1 tbsp diced canned jalapeños
  • 1/2 cup Trader Joe’s lite cheese blend or lite cheese blend

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine all the ingredients (except for the chicken breasts) into a food processor. Blend well.
  3. Add a spoon full of cheese mixture to the center of the chicken breast and fold chicken breasts in half. Place a toothpick to hold the sides up.
  4. Place stuffed chicken onto a lined with parchment paper cookie sheet.
  5. Cook for 35-40 min.

Servings: Makes 4 stuffed chicken breasts

BLUE: 4 SmartPoints per chicken breast

PURPLE: 4 SmartPoints per chicken breast

Sorry to be a pest....Is the bacon raw or cooked? You say to put all ingredients in a food processor and blend well. However, it looks like you can see the bacon and pieces of jalapeno. Is it just a one/two pulse? I prefer seeing the bacon and pepper as opposed to everything mashed together. Thank you again and sorry for all the questions.

Do these brown? Do you spray the chicken with cooking oil perhaps? Thanks for all your great recipes. I made your lightened up mac & cheese and it was a hit. So much so, that I didn't even get 1 macaroni on my dish or in my belly!! The family devoured it.
