Chicken Fried Cauliflower Rice

This Chicken Fried Cauliflower Rice is easy to make and can be served as your main dish or as a side dish. It’s low in points, low in carbs, and filled with veggies and protein!

Servings: Makes 3 (1 cup) servings

Asian-Style Lettuce Wraps

Ingredients:

  • 3 oz boneless chicken breast, raw and diced
  • 1 tsp sesame oil
  • 2 cups frozen riced cauliflower
  • 1/4 cup frozen peas
  • 1/4 cup frozen corn
  • 1/4 cup diced red pepper
  • 1 large egg
  • 1 Tbsp soy sauce
  • dash of garlic powder
  • 1/2 bunch of scallions

Directions:

  1. Spray a large skillet with non stick cooking spray. Add the diced chicken, cook on medium heat, until the chicken is no longer pink, about 5 minutes. Remove cooked chicken from skillet.  
  2. Using the same skillet, scramble one egg and add 1 tsp sesame oil.
  3. Add riced cauliflower, corn, peas, red peppers, garlic, soy sauce and sauté for 2 minutes.
  4. Fold in diced chicken. Stir and sauté on low heat until all juices are absorbed.
  5. Add scallions and serve.

  • 3 oz grilled boneless chicken breast, diced

  • 1/4 cup frozen peas
  • 1/4 cup frozen corn
