Strawberry Shortcake Waffle

  • 1 scoop Quest Nutrition Strawberry protein powder (one sample packet is equivalent to one scoop) you can also use any other flavor of Quest.
  • 1 tsp baking powder
  • 1 egg
  • 1/3 cup water
  • 1 tsp almond extract or vanilla extract
  • Fresh strawberries

In a mixing bowl combine Quest powder, egg, baking powder. water, and extract and mix well using a small wire whisk. The batter should be on the thinner side. But not toot thin. (Too much water will make the batter over flow.)

Spray waffle iron with non stick cooking spray, add pour batter into waffle iron.

Slice strawberries and add as topping.

Servings: Makes one waffle for 1 Freestyle SmartPoints® point.

Notes: I added 4 Tbsp fat free Reddi Whip, 1/4 cup Mrs Butterworth’s sugar free syrup and dash of cinnamon for one additional point.

  1. Brilliant idea, however, it’s not the same consistency as a typical waffle. Any suggestions for a more accurate texture and consistency?

    1. I think the waffle maker makes a big difference in cooking it right. I have made it with different waffle makers and notice the one I use now makes the waffle crispy on the outside and soft on the inside. Also, the key is making sure the right amount of water is used. Too much water and the waffle is flatter and not enough water makes the waffle denser.

Anyway, I have perfected it over time and in playing around with the amount of water to use. Hope that helps with that. Thanks so much
