Cauliflower Risotto

Ingredients:

  • 1 1/2 cups frozen riced cauliflower.
  • 1/2 tsp of everything but the bagel seasoning
  • Dash of dry rosemary, dash of garlic powder
  • 1 garlic and herb laughing cow cheese wedge
  • 1 oz lite mozzarella (I use Trader Joe’s)
  • 1 tbsp fat free sour cream or non fat plain yogurt
  • 1 center cut bacon (crumbled into pieces)

Directions:

  1. Combine frozen riced cauliflower, seasonings, and cheese wedge in a microwaveable bowl.
  2. Cook for 2-3 minutes until cheese wedge is soft. Stir in mozzarella, bacon pieces, fat free sour cream and cook for an additional 1-2 min.

Servings: Makes 1 serving/ 3 Freestyle Smartpoints for serving
