Egg Bites

These Egg Bites are low in points and so simple to make. Keep them in the fridge for a quick grab & go breakfast throughout the entire week!

Makes 12 egg bites

What ingredients do I need to make these Egg Bites?

  • Large eggs-whole or you can substitute the whole eggs for egg whites, if you desire.
  • Butterball turkey breakfast sausage patties– chopped or you can use 1 and 1/2 cups of Butterball breakfast sausage crumbles. 
  • Green onions- chopped 
  • Unsweetened almond milk– you could also use unsweetened cashew milk or skim milk.
  • Salt
  • Garlic powder
  • Black pepper-fresh ground 
  • Shredded light cheddar cheese -I use Velveeta shreds or Trader Joe’s light 3 cheese blend

What other ingredients can I add to these Egg Bites?

  • Bacon- cooked and crumbled. 
  • Broccoli- cooked
  • Fresh herbs such as-rosemary, parsley, basil ect.
  • Asparagus-chopped and cooked.
  • Diced or cubed ham.

How do I make these Egg Bites?

Preheat oven to 350 degrees.

In a large bowl, beat eggs. Add green onions, unsweetened almond milk, garlic powder, salt, and pepper.

Stir in sausage pieces and cheese.

Spoon mixture in 1/3 cupfuls into muffin cups coated with nonstick cooking spray.

 Bake 15-18 minutes. Remove from oven. Serve warm.

  • 6 Butterball cooked turkey breakfast sausage patties, chopped or 1 and 1/2 cups of Butterball breakfast sausage crumbles
  • 2 green onions, chopped 
  • 3 Tbsp unsweetened almond milk, unsweetened cashew milk, or skim milk
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 tsp pepper
  • 1/2 cup shredded light cheddar cheese -I use Velveeta shreds or Trader Joe’s light 3 cheese blend

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large bowl, beat eggs. Stir in chopped green onions, unsweetened almond milk, garlic powder, salt and pepper. Stir in cooked sausage pieces and cheese.
  3. Spoon mixture in 1/3 cupfuls into muffin cups coated with nonstick cooking spray.
  4.  Bake 15-18 minutes.

I tried them today, the kids loved them. I'll have to spray the pan better next time. They stuck to the sides and bottom.

I’m slightly confused. The ingredients only mention green onions, but the directions say to cook the onions until they are translucent…should there be more than one type of onion in the ingredients?
