Air Fried Onion Rings


  • 1/2 cup Italian Style breadcrumbs
  • 1 large sweet onion, sliced 1/4 inch thick, and separated into rings
  • 1/4 cup self rising flour (I use Gold Medal)
  • 1 egg beaten
  • 2 Tbsp skim milk or unsweetened almond milk


  1. Pour bread crumbs onto a shallow plate & set aside.
  2. In a another shallow plate add flour & set aside.
  3. In a another shallow plate add beaten eggs and milk. Whisk until combined.
  4. Dip onion rings into flour mixture and then in egg wash, and then into bread crumbs. Continue until all onion rings are coated.
  5. Place onions in the air fryer basket.( I recommend the simplelivingproducts air fryer.)
  6. Spray onions with nonstick canola oil cooking spray
  7. Set air fryer to 390 degrees for 5-8 minutes or until they are crispy.

Strawberry Shortcakes

  • 1/2 cup water
  • 1 tsp baking powder
  • 3 large eggs whites
  • 1 Tbsp Land o’ Lakes light butter or you can use 2 Tbsp unsweetened applesauce
  • 1 tsp almond extract
  • 1 tsp vanilla extract
  • 8-10 strawberries and sliced
  • 8 Tbsp fat free whip topping
  • 1 tsp vanilla extract


  1. Preheat oven to 350°F.
  2. In a large bowl, whisk together angel food cake protein powder, baking powder, water, egg whites,melted butter or unsweetened applesauce, almond extract and vanilla extract, until well combined.
  3. Spoon batter evenly into a lightly (sprayed with non stick cooking spray) muffin tin, filling each cup 3/4 way full.
  4. Bake for 12-14 minutes until a toothpick inserted in the center comes out clean. Let cupcakes cool on a cooling rack for 10 minutes.
  5. While cupcakes are cooling, make the filling.
  6. In a medium bowl, using a whisk, blend together, fat free cool whip and vanilla extract. Then fold in the sliced strawberries.
  7. Slice the tops off each cupcake and fill with whipped cream mixture. Place cupcake top back on top.
  8. Sprinkle a little sugar substitute on the tops if desired.

BBQ Pizza made with two ingredient dough



  • 1/2 cup Fage plain non-fat Greek yogurt
  • 1/2 cup Gold Medal self rising flour
  • dash of garlic powder
  • 1/4 cup Sugar Free G. Hughes BBQ sauce
  • 2 oz lite Mozzarella (I use Trader Joe’s lite mozzarella)
  •  6 oz boneless skinless diced pre-cooked chicken tenders ( I use Tyson’s )
  • ¼ cup finely chopped red onion
  • 1 Tbsp finley chopped fresh cilantro


Preheat oven to 425 degrees.

  1. Combine flour, Greek yogurt and garlic powder
  2. Sprinkle a little extra flour on the tabletop or whatever surface you plan on using to knead the dough. Place the dough ball on top, kneading it with your hands. If it sticks to your hands, sprinkle a little extra flour on it. Knead for 8-10 times, until it’s a pliable dough
  3. Spread the dough out
  4. on a parchment-lined sheet to roll dough until it’s about 1/4″ thick, and then flip it into a lightly sprayed with non stick cooking 10-inch cast iron pan or cookie sheet.
  5. Cover with BBQ sauce, mozzarella cheese, pre-cooked diced chicken, cilantro, red onion.
  6. Cook for 10 to 12 minutes, or until the crust has puffed up and is lightly golden and all of the cheese has melted.
  7. Once cooled, drizzle a little more BBQ sauce on top.

Strawberry Lemon Meringue Pancakes


  • 1 scoop or sample packet of Devotion nutrition angel food cake or you can use 1/4 cup any vanilla base protein powder that is especially made for cooking
  • 1 Devotion nutrition lemon meringue flex flavor packet (optional)
  • 1/2 tsp of lemon extract.
  • 1/2 cup water
  • 1 egg
  • 1/2 tsp baking powder.
  • 4 strawberries diced
  • 3 Tbsp Mrs Butterworth’s sugar free syrup
  • 3 Tbsp fat free Reddi Whip.

  1. In a small mixing bowl combine protein powder, flex flavor packet, and baking powder.
  2. Add egg, extract and water and whisk with a fork or small whick until ingredients are well incorporated. Pour batter into a lightly greased skillet pan. Cook for 2-3 minutes on each side.
  3. Serve with diced strawberries, redi whip and syrup

Enchilada Pasta Skillet

  • 6 oz high fiber pasta (I used Barilla plus Penne pasta)
  • 1 lb 99% ground turkey
  • 1 Tbsp taco seasoning
  • 1 can (15 oz) low sodium black beans (rinsed)
  • 1/4 cup water
  • 1 (10.5oz) can of mild red enchilada sauce
  • 4 Tbsp of Tostitos cheese dip
  • 1/2 cup lite cheddar cheese (I use Trader Joe’s)
  • 1/4 cup non fat plain yogurt
  • 3 green onions chopped and diced for garnish


  1. Cook the pasta according to the directions on the box and drain.
  2. In a large skillet, sprayed with non stick cooking spray, add ground turkey and cook on medium high until ground turkey is cooked all the way through.
  3. Add the taco seasoning and 1/4 cup of water, stir and cook until water is gone.
  4. Incorporate pasta, black beans, enchilada sauce and cheeses on into skillet on low heat. Add non fat plain yogurt and stir until all ingredients are incorporated and garnish with green onions.

Mini Almond Joy Donuts

These mini Almond Joy donuts are gluten free, and have over 5 grams of protein per donut. They make for a great low point, low calorie dessert.

  • 1 egg
  • 1 tsp baking powder
  • 1/3 cup warm or hot water
  • 1 Tbsp @pillsbury sugar free chocolate frosting (melted)
  • 1 Tbsp sweetened coconut (toasted)


  1. Preheat oven to 350 degrees.
  2. Mix all ingredients into a small mixing bowl.
  3. Pour batter into a lightly greased silicone mini donut pan.
  4. Cook for 10-12 minutes. Take them out of the oven and let them cool for 5-7 minutes.
  5. Place 1 Tbsp sugar free frosting in a microwaveable bowl for 15 seconds to melt the frosting and then spread evenly on top of donuts.
  6. Spray a skillet with non stick cooking spray and add sweetened coconut flakes. Toast coconut flakes on low and continue storing until coconut flakes are toasted. Remove from heat. Sprinkle evenly on top of frosted donuts.
