Carrot Cake Cupcakes

  • 2 Devotion Monkey Bread flex flavor packets or you can substitute this for 1/2 Tbsp almond extract
  • 4 Tbsp flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • Dash of nutmeg
  • 1/2 cup unsweetened almond milk or water
  • 1 egg white
  • 1 whole egg
  • 1/4 cup carrots, finely grated

Frosting:

Mix together:

  • 2 Tbsp softened light cream cheese
  • 2 Tbsp fat free cool whip
  • Dash of vanilla or almond extract
  • Dash of cinnamon

Directions:

  1. Preheat oven to 350 degrees. Use non-stick cooking spray to coat 6 muffin cups and set aside.
  2. In a separate bowl, mix almond milk, egg white and egg. Combine dry ingredients with liquid mixture, then fold in carrots and pour into prepared pans.
  3. Bake for 12-14 minutes.
  4. Allow to cool completely, then spread frosting over the top with a dash of cinnamon.

Servings: Makes 6 carrot-cake cupcakes/ 1 Freestyle Smartpoints for one cupcake

  1. OMG your WW recipes look divine! I gotta try these. Cant decide which one. I just bought a big container of Quest sea salt caramel protein powder. I better use it up before I buy Devotion stuff, but I hear its really good.

    1. Oh thank you. Yes. You can definitely use up your Quest protein powder by substitute it for the Devotion protein powder on these recipes…but I’ve found that I absolutely love Devotion protein powder and how much more flavors you can get from just buying the base protein powder flavor of angel food cake and then the rainbow flex flavors to make different flavors to the recipes. It’s definitely one worth trying 😍

    Yes, Devotion is in the process of repackaging their products and I was told they will have it all back in at stock the first week of July. The angel food cake and brownie batter are excellent by themselves and I even use extracts to switch up the flavors!! You’ll love it!
