Pepper Jack Mac n’ Cheese with Chicken

A kickin’ flare to one of the most popular comfort foods. Mac n’ cheese meets pepper jack!

Ingredients:

  • 8 oz elbow noodles ( I use barilla plus elbows)
  • 4 laughing cow pepper jack cheese wedges
  • 1 Tbsp flour
  • 1 Tbsp Land o’ Lakes light butter or any light butter
  • 1/2 cup skim milk
  • 5 (2 cups) skinless, boneless chicken tenders (diced)
  • Dash of red pepper flakes seasoning
  • Dash of salt and pepper

Directions:

  1. Cook the pasta as directed on back of the packaging. Drain and set aside.
  2. Spray a skillet pan with non stick cooking spray, place chicken tenders in pan and sprinkle a dash of red pepper flakes, salt, and pepper on the chicken tenders. Cook for 3-4 minutes on both sides until chicken is no longer translucent inside. Set aside.
  3. Melt the butter in a large pan and add the flour. Cook over medium heat, stirring constantly, for a minute or so. Add the milk and stir or whisk until well combined. Cook, stirring constantly, until the mixture thicken.
  4. Stir in pepper jack cheese wedges until they have completely melted.
  5. In a large mixing bowl, place noodles in bowl -Pour cheese sauce over cooked noodles and stir until sauce has been incorporated with noodles.
  6. Fold in cooked diced chicken tenders.
  7. Enjoy!

Monterey Chicken

Marinate Ingredients :

  • 2 Tbsp soy sauce
  • 1 Tbsp honey
  • 1 Tbsp Worcestershire’s sauce
  • 1 ½ tsp minced garlic or 1 tsp garlic powder

  • 4 boneless, skinless chicken (I use thinly sliced chicken breasts)
  • 8 slices of hormel precooked black label bacon ( I get it at Sam’s club. It’s 4 slices for 2 Freestyle smart points)
  • 4 Tbsp sugar free bbq sauce (I use G. Hughes Sugar Free BBQ Sauce)
  • 2 oz light 3 blend cheese ( I use Trader Joe’s lite 3 cheese blend)
  • 4 green onions (sliced and diced for garnish) and diced tomatoes if you choose.

Directions:

  1. In a zip lock bag combine all marinate ingredients and chicken breasts. Close bag and flip around until all ingredients are incorporated. Refrigerate for 2-4 hours.
  2. Preheat lightly greased cast iron grill or outdoor grill to medium heat.
  3. Place chicken breasts on grill and cook until chicken is no longer translucent in the middle.
  4. After the chicken is finished cooking, transfer the chicken breasts to baking sheet covered in parchment paper or foil. Be sure to spray foil with non stick cooking spray.
  5. Spread 1 Tbsp of sauce free barbecue sauce over each chicken breast. Top each chicken breast with 2 slices of bacon and and a 1/2 oz of the light cheese. Place the baking sheet in an oven and set oven to 350 degrees and cook until cheese is melted.
  6. Remove from oven and garnish with green onions.

Creamy Pesto Chicken Sandwich

Directions:

  • 1 boneless skinless chicken thinly sliced chicken breasts
  • Dash of your favorite chicken seasoning (I use Daks original red seasoning.) you can get free shipping and 10% off using promo code WWpounddropper through Dak’s website here. They are salt free and taste amazing.
  • 1 Tbsp pesto sauce ( I use Trader Joe’s)
  • 1 Tbsp light mayonnaise ( I use best food light mayonnaise)
  • slices of red onion
  • 1 ciabatta roll ( I use Trader Joe’s 3 point ciabatta roll)

Directions:

  1. Season and grill chicken breast in a cast iron grill or outdoor grill. I use this cast iron grill.
  2. Grill chicken until it’s no longer pink.
  3. Slice ciabatta rolls and place in toaster.
  4. In a small mixing bowl combine pesto and mayo. Stir until both ingredients have been incorporated.
  5. Spread pesto mayo on toasted ciabatta and add onion and grilled chicken

Servings: Makes 1 sandwich/ 6 Freestyle smart points per sandwich

BBQ Chicken Salad

This BBQ Chicken Salad is my absolute favorite. Topping it with Litehouse jalapeño ranch takes this salad to a whole new level.

Ingredients:

  • 3 panko crusted chicken tenders or boneless skinless chicken tenders
  • 1/4 cup frozen (thawed) corn
  • 1/4 cup canned black beans (drained)
  • 1 oz lite mozzarella (I use Trader Joe’s)
  • 1 oz avocado
  • drizzled with G Hughes Sugar Free BBQ sauce
  • 1 Tbsp drizzled @litehousefoods jalapeño ranch ( you can usually find this dressing in the refrigerator/produce section at Walmart.
  • 1 cup iceberg lettuce (cut into pieces or from a bag)

Directions:

  1. On a large plate combine lettuce, corn, beans, mozzarella cheese, avocado.
  2. Dice panko Chicken tenders and add to Salad.
  3. Drizzle bbq sauce and jalapeño ranch dressing over the top.
  4. Enjoy!

The Lighter Monte Cristo Sandwich

What’s not to love about a Monte Cristo Sandwich?! And the creaminess of the Gouda cheese really takes it to the next level.

Ingredients:

  • 2 oz deli ham (or turkey) ( I use Oscar Mayer smoked turkey)
  • 1/2 oz grated gouda or gruyere cheese
  • 1 tsp light mayo (divided) ( I use Best Foods light mayonnaise)
  • 1 large egg
  • 2 tablespoons skim or unsweetened almond milk
  • Dash of salt and pepper
  • 1/2 Tbsp land or lakes light butter or any light butter

Directions:

  1. Cut the bread crusts off each slice of bread.
  2. Spread 1/2 tsp light mayo on the inside of each slice of bread Add layer of cheese and a layer of ham on top of the mayo.
  3. In a small bowl, stir together the egg, milk, and a dash of salt and pepper.
  4. Dip the sandwich in egg mixture. Be sure to coat both sides.
  5. In a skillet add 1/2 Tbsp light butter and on place sandwich in top of melted butter and cook on medium heat. Let it cook for 3-4 minutes and flip it over and cook for another 3-4 minutes.
