Pepperoni Crusted Stuffed Chicken

Ingredients:

  • 4 ( 4 oz.)  raw skinless, boneless, chicken breasts ( I like to use thinly sliced chicken breasts)
  • 24 turkey pepperoni slices ( I use Great Value from Walmart)
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp Italian Seasonings
  • 1 large egg
  • 4 laughing cow cheese wedges or 2 oz. light mozzarella cheese ( I like to use Pantry Market light mozzarella from Target) 
  • 1/2 cup zero point marinara or pizza sauce ( I use my zero point marinara)

Directions:

  1. Preheat oven to 350 degrees.
  2. In a food processor or blender, combine panko breadcrumbs, turkey pepperoni, grated Parmesan cheese and Italian seasonings. Blend until all ingredients have been incorporated.
  3. Pour breadcrumb mixture into a shallow plate. Set aside.
  4. In a shallow dish, whisk egg with 1 tsp water until lightly beaten or add liquid egg substitute if you’re following the WW green plan. 
  5. Meanwhile, season chicken breasts with salt and pepper.
  6. If you are NOT using the thinly sliced chicken breasts, use a knife to slice each chicken breast vertically.
  7. Spread laughing cow cheese wedge on each chicken breast or add .5 oz. light mozzarella to the middle of each chicken breast.
  8. Fold up each chicken breast, from the short side and tuck in the ends; secure with a toothpick.
  9. Coat all 4 chicken breasts in egg mixture and then immediately into pepperoni/breadcrumb mixture.
  10. Spray a 9×11 baking dish with non stick cooking spray. Spread a little marinara sauce on the bottom of baking dish. Place chicken breast roll-ups, seam side down, on top of marinara sauce.
  11. Cook for 30-35 minutes or until chicken breasts are completely cooked through.
  12. Take out of oven and allow them to cool for a few minutes. You can also add more marinara sauce on top.

I just want you to know that I made the pepperoni crusted stuffed chicken breasts this evening and my husband that is not a big fan of chicken just loved it! He even went back for seconds! Definitely a keeper!
